Summer Kale and Hemp Seed Salad
Kale is high in vitamins and minerals. It is considered a super food and is best consumed lightly steamed. The steaming process helps to open up the cellular walls of the leaf, so that the nutrients are more bio-available. Hemp seeds are an excellent source of a complete protein, plus they are a wonderful source of omega 6 and omega 3.
8 cups fresh kale (chopped)
1/2 cup Water
2 Tomatoes (chopped)
4 Tbsp. Hulled hemp seeds
2 cloves Garlic (minced)
2 Tbsp. Lemon Juice
4 Tbsp. Olive oil
Sea salt and black pepper to taste (to taste)
In a bowl big enough to fit all ingredients, combine the minced garlic, lemon juice, olive oil, chopped tomato, and hulled hemp seeds.
Heat the water in another pan over medium- high heat. Once bubbles begin to form in the water, add the kale, and reduce heat to medium-low. Cover and cook for 5 minutes, tossing every so often to cook evenly.
Once the Kale is wilted, remove from heat and drain excess water. Add the kale to the garlic, lemon, and hemp seed mixture. Season with sea salt and black pepper.
